Ju Ju Grilled Brussel Sprout Skewers
Prep Time 5 min ~ Cook Time 20 min
brussel sprouts (5 per skewer, 1 skewer per person)
½ cup Conan's Island Ju Ju (Habanero Mango)
½ cup Local Honey (we love TbeeS Honey!)
Presteam brussels until easily skewered; about 7-10 minutes. Be careful not to overcook. Mix Ju Ju and Honey together. Skewer brussels and grill, brushing occasionally with the Ju Ju-Honey mixture, turning every so often.
Ju Ju Stuffed Mini Bell Peppers
Prep time 15 min ~ Cook time 12-15 min
Preheat oven to 375
1 bag Mini bell peppers
4 oz Cream cheese
4 oz Panko bread crumbs
¼ tsp sea salt
¼ tsp cracked black pepper
2 oz Conan's Island Ju Ju (we recommend Chipotle Mango for a delightful smokiness, Roasted Habanero Mango, or for more heat Ghost Pepper Papaya)
Get rid of those seeds and stems and set your peppers aside.
In a mixing bowl combine softened cream cheese, your choice of Conan’s Island Ju Ju Sauce, 3 oz bread crumbs, and mix well. Season to taste with salt and pepper.
Stuff your peppers with the cream cheese mixture and sprinkle with the last ounce of bread crumbs.
Arrange peppers in muffin tin so that they hold each other upright. (Depending on your muffin tin this could be 3 or 4 per cup).
With a pastry brush, lightly pat tops with olive oil and place in a 375 oven until light golden brown (approx 12-15 minutes).
Let rest for 5 minutes before serving!
Side note: you can also add garlic, fresh herbs, or other veggies to change it up a bit!
Spicy Black Bean Cakes
Prep time 20 min ~ Cook time 10
1 small yellow onion (diced)
1 bell pepper (diced)
2 cans black beans rinsed and drained
Panko bread crumbs
A little olive oil (an eight of an inch in bottom of pan)
1 spoonful mayonnaise
¼ cup Conans Island Ju Ju (we love this with our Chipotle Mango)
Place beans in mixing bowl with eggs and mayo, set aside. Sauté onions & peppers over medium-high heat until translucent, add Island Ju Ju, and give it a good stir.
Add to black bean mix and mix in bread crumbs. The amount of bread crumbs varies. You just need enough to make it stick together. Form cake shapes to the desired size and pan fry over medium-high heat in olive oil until golden brown.
Serve & enjoy!
