Chipotle Mango Lemon Meringue Pie

Prep Time 20 min ~ Cook Time 35 min

2 pie crusts of your choice 

juice of 2 lemons 

zest of 2 lemons 

2 oz Conan's Island Ju Ju (Chipotle Mango)

1 cup cornstarch

2 cups sugar 

4 large eggs (separated)

2 cups water

1 Tbsp cream of tartar

Pre bake pie crusts and set aside

In medium saucepan combine juice, zest, 1½ cup sugar, ¾ cup cornstarch, 1 ½ cup water, and Ju Ju. Stir frequently over medium heat until it starts to thicken, then temper in

egg yolk and combine thoroughly. 

Pour equally into both pie shell and set aside. 

In a bowl, combine remainder of sugar and cream of tartar. Cook remainder of water and cornstarch over medium heat until thick. 

In a mixer with whip attachment, whip egg whites until frothy and add sugar mixture 1 Tbsp at a time then the cornstarch mixture. Whip until stiff peaks form. 

Top lemon filling with meringue. you can spoon it on or you can get fancy with a piping bag. Bake at 400 degrees until golden. 

Jalapeno Pineapple Key Lime Pie

Prep time 30 min

2 pie crusts of your choice 

Juice of 2 limes

Zest of 2 limes 

2 oz Conans Island Ju Ju (Jalapeno Pineapple)

¾ cup cornstarch, 

1 ½ cups sugar 

4 large egg yolks, 

1 ½ cups water

Pre bake pie crusts & set aside. 

In medium saucepan combine juice, zest, 1 ½ cups Sugar, 

¾ cups cornstarch, 1 ½ cups water and Ju Ju and stir frequently over medium heat until it starts to thicken. 

Take pan off the heat, temper in egg yolk and whisk thoroughly, pour equally into both pie shells and set aside to cool to room temperature. 

When cool, top with whipped cream and toasted coconut
